Crispy Homemade Fish Sticks

"Awesome homemade fish sticks! Tender on the inside, perfectly crispy on the outside. Covered in a simple seasoning and Parmesan crust. White fish or salmon!..."

INGREDIENTS
1 1/2 lb firm fish fillet such as salmon, skin removed (You can use a firm white fish fillet like cod)
Salt
1 tsp black pepper
1 tsp dried oregano
1 tsp sweet paprika
1/2 cup flour (all-purpose, whole wheat or gluten free flour)
1 egg, beaten with 1 tbsp water (egg wash)
1/2 cup bread crumbs
1/2 cup Parmesan
Extra virgin olive oil (I used Private Reserve Greek EVOO)
Zest of 1 lemon and juice of 1/2 lemon to finish
Parsley for garnish
Tahini sauce or Tzatziki sauce
