INGREDIENTS
4 chicken breasts, cut horizontally, and pounded to about 1/4 inch thick (or just use chicken cutlets)
2 lemons, zest of
1 1/2 C plain breadcrumbs
2 Tbsp grated parmesan cheese
2 eggs, whisked with
2 Tbsp water
3 Tbsp flour
1 tsp ground pepper
1 tsp kosher salt
2 garlic cloves, finely minced
1 Tbsp canola oil
2 C heavy whipping cream
1 Tbsp Dijon mustard
1/4 C fresh lemon juice, plus
1 tsp fresh lemon juice
1/8 C chicken stock
Kosher salt
fresh ground pepper
1 Tbsp unsalted butter
