1/2 cup grated Parmesan cheese
2 teaspoons sweet paprika
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper (or more or less to taste (can omit if you don't want any spice))
1 Tablespoon extra-virgin olive oil
1/2 cup Dijon mustard
1 egg white
8 skin-on, bone-in chicken thighs (trimmed of fat and some skin (*see "tips" below))
Kosher salt
