8 skinless chicken thighs and/or drumsticks, about 2 X pounds

X teaspoon EACH black, white and cayenne pepper
1 X teaspoons thyme, divided use
X pound bacon, cut in 1-inch pieces
2 cups chopped onion
1 cup chopped celery
X cup chopped bell pepper
8 peeled garlic cloves
2 tablespoons tomato paste
1 bay leaf
2 cups dry white wine
X pound Italian sausage, cut into 2-inch pieces
X pound pork butt, cut into 1-inch cubes
