INGREDIENTS
14.1 oz (400g) arborio rice
4 cups (1 litre) litre chicken stock
3.5 oz (100g) chanterelle mushrooms (finely sliced)
3.5 oz (100g) chestnut mushrooms ((Crimini) finely sliced)
1 heaped tbsp mascarpone
1 tbsp fresh thyme
1 white onion (finely chopped)
2 cloves garlic (finely chopped)
2 tbsp parmesan (freshly grated)
2-3 tbsp olive oil
1 pinch salt and pepper
