Ingredients: About 3 pounds of red potatoes, washed and diced into 1"- 2" pieces; 2 stalks celery, diced; 1/2 cup sweet onion, diced; 1 English cucumber, diced; 1 cup reduced fat mayonnaise (I like the one with olive oil in it); 1 cup reduced fat sour cream; 2 TBS apple cider vinegar (or more if you like it tangy); 1 TBS Dijon mustard; 1 tsp. granulated sugar; 1/4 cup fresh dill, chopped; 2 TBS snipped fresh chives; kosher salt and fresh ground black pepper, to taste
