2 cups finely chopped cucumber, skins peeled or “striped” first if they’re tough, seeded if necessary (see ALANNA’s TIPS)

1 cup grape tomatoes, halved or quartered

1/2 cup finely chopped radish

CREAMY DRESSING
•
1/4 cup (60g) low-fat sour cream or Greek yogurt
•
4 tablespoons fresh herbs (basil, cilantro, oregano, etc.)
•
1 tablespoon very finely minced jalapeño
•
1 tablespoon fresh lime juice
•
1 clove garlic, minced
•
1/4 teaspoon cumin (don’t skip this)
•
1/4 teaspoon seasoning salt
