For the Béchamel Sauce:
6 tablespoons butter
3 garlic cloves, grated or finely choped
5 tablespoons flour
¾ teaspoon salt
5 cups milk
4 ounces Parmesan cheese, grated (about 1 cup)
1 cup Panko bread crumbs
12 slices dried lasagna noodles
1 tablespoon kosher salt
1 1/2 pounds cooked chicken breast, chopped
1 1/2 cups oil packed sun-dried tomatoes, drained *(See Notes)
8 ounces sliced mushrooms
1 tablespoon fresh thyme leaves
3 tablespoon chopped fresh parsley, divided
