INGREDIENTS

1 large head cauliflower, cut into florets (about 2-2½ lbs)

4 slices thick-cut bacon (about 4 ounces) rough chopped, or pancetta
•
1 yellow onion, peeled and chopped
•
3 cloves garlic, peeled and minced
•
Splash of white wine (optional)
•
4 cups vegetable broth or chicken broth, plus more if needed for thinning
•
1 bay leaf
•
2-3 sprigs fresh thyme
•
½ cup heavy cream or half and half
•
Salt & black pepper to taste
