INGREDIENTS
1 medium butternut squash (3-4 lbs), peeled, seeded and chopped into 1½ inch pieces
¼ cup olive oil, for roasting
1 Tablespoon butter or oil, for sautéing
3 shallots, minced
2 garlic cloves, minced
1 carrot, peeled and grated
1-2 Rusett potatoes, peeled and chopped into 1 inch pieces
3-5 sprigs of thyme
4-5 cups chicken or vegetable broth
¼-1/2 cup heavy cream
salt and ground black pepper, to taste
Parmesan cheese, finely grated, to garnish, optional
fresh thyme, parsley or chives, to garnish, optional
