1 cup frozen chopped spinach (thawed and water squeezed out) -OR- 2 cups fresh baby spinach

Sauce:
•
2 cups half-and-half -OR- light cream
•
2 tbs flour
•
1/4 cup chopped fresh basil -OR- 2 tsp dried
•
1 small head roasted mashed garlic
•
1 tsp salt
•
1/4 tsp pepper
•
2 tbs grated Romano or Parmesan cheese
