INGREDIENTS
4 tablespoons olive oil
1 medium onion, chopped
2 large cloves of garlic, chopped
1 lb Italian sausage, casings removed
1 cup mascarpone cheese
(2) large cans Italian tomatoes
2 tsp salt
1 tsp dried marjoram
1 tsp crushed red pepper
1 lb rigatoni pasta, cooked about 1 minute less than the package instructions
1/2 cup grated parmesan cheese
12 oz grated fontina or mozzarella cheese (divided)
