1 cup whole milk
½ cup heavy whipping cream
1 shallot, whole but peeled
2 pinches ground nutmeg

1 large or 2 small bunches of kale, rinsed & leaves torn from stems
Salt & black or white pepper, to taste
2 tablespoons cream cheese, optional
½ cup of Parmesan, grated, optional
