2 medium Yukon Gold potatoes (about 6 ounces each), washed
3/4 teaspoon salt
1/2 cup milk
1/8 teaspoon freshly ground black pepper
3 tablespoons unsalted butter, cut into pieces
1/2 cup all-purpose flour
2 large eggs
About 3 cups canola oil
