INGREDIENTS
2 tbsp butter
1/2 yellow onion, sliced thin
1/2 cup carrots, sliced thin
1 rib celery, chopped
2 cups canned pure pumpkin (not pumpkin pie filling!)
3 cups chicken broth
white pepper, to taste
1/4 tsp ground ginger
1 1/2 tsp salt
1 cup cream or half and half
shelled pumpkin seeds for garnish, optional
