Breaux Bridge, Louisiana, is considered the Crawfish Capital of the World. Along with that title come some of the best Acadian dishes, including this one for crawfish pie.

4 tbsp. flour
•
1 cup onion, finely chopped

1⁄2 cup celery, finely chopped

1⁄2 cup green bell pepper, finely chopped

2 garlic cloves, minced

3⁄4 cup hot Double-Rich Fish Stock
•
1 tbsp. paprika
•
Freshly ground black pepper

2 lbs. peeled crawfish tails
