· 1 tablespoon canola oil, plus more for greasing
· 1 shallot, finely chopped
· 1 stalk celery, finely chopped
· 1 small jalapeño, seeded and finely
chopped, optional
· 2 cloves garlic, finely chopped
· 1 pound cooked crawfish tail meat
(about 2 cups) or small raw shrimp
· ¼ cup white wine
· 4 large eggs, lightly beaten
· ¼ cup chopped fresh parsley
