1 tablespoons olive oil

3/4 cup wild rice, cooked and cooled
•
1/2 dried cranberries, chopped
•
2 tablespoons unsalted butter, melted and cooled

For French Toast:
•
1 cup half and half
•
3 large eggs
•
2 tablespoons honey, warmed in microwave for about 20 seconds
•
1/4 teaspoon salt
•
8 - 1/2 inch slices cranberry wild rice bread
•
4 tablespoons butter
