Cranberry Pistachio Biscotti Recipe

"The red and green make a very pretty cookie. You may use other nuts instead of pistachios, if you prefer...."

INGREDIENTS
1/4 cup light olive oil
3/4 cup white sugar
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 eggs
1 3/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup dried cranberries
1 1/2 cups pistachio nuts
