1 can (10 oz) Enchilada sauce
4 cups shredded low fat Cheddar cheese & Monterey Jack blend
1 cup fat free Greek style yogurt (Chobani and Fage 0% fat works well)
2 medium-sized tomato diced
1/3 cup scallion sliced
1 (3.25 oz) canned black olive slices
1/4 tsp pepper
1/8 tsp salt
8 (8") 96% fat free tortillas, warmed
