A great warm meal for cool, wet spring evenings. Original recipe from www.faithfulprovisions.com

McCormick’s White Chicken Chili Spice Packet:
1 teaspoon dried oregano
2 teaspoons cumin
1 tablespoon chili powder
1/2 teaspoon salt (sea salt if you have it)
1 teaspoon white pepper (optional)
1/2 teaspoon cayenne (optional if you want a kick)

Slow Cooker Crock Pot

Ingredients

  • ·
    1 lb shredded or diced cooked chicken
  • ·
    1-2 cans white beans (northern or cannellini)
  • ·
    1 can chicken broth
  • ·
    1 tablespoon olive oil
  • ·
    1 onion, diced
  • ·
    2 garlic cloves, minced
  • ·
    1 can green chilies (optional)
  • ·
    1 can diced tomatoes (or rotel for a little kick!)
  • ·

  • OR USE THE FOLLOWING

  • ·
    1 teaspoon dried oregano

    2 teaspoons cumin
  • ·

  • ·
    1/2 teaspoon salt (sea salt if you have it)

  • ·

How to Make CP White Chicken Chili

Step-by-Step

  1. Cook onions and garlic in olive oil in a large stock pot until soft, about 3 minutes.
  2. Add all remaining ingredients and bring to a boil.
  3. Once boiling, turn down to simmer on low for 1 hour. OR
  4. Add all ingredients into a crock pot and simmer on low for 6-8 hours.
