INGREDIENTS
1/4 cup + 2 Tbsp olive oil
3 Tbsp red wine vinegar
2 Tbsp fresh lime juice
2 tsp honey
1 1/2 tsp minced garlic
1 tsp dried mexican oregano*
Salt and freshly ground black pepper ((about 1/2 tsp of each))
1 (14.5 oz) can black eyed peas, (drained and rinsed)
1 (14.5 oz) can black beans, (drained and rinsed)
1 lb roma tomatoes, (diced small (about 3 cups))
1 1/2 cups frozen corn, (thawed according to package instructions)
1 cup small diced green bell pepper
1 large semi-firm but ripe Hass avocado, (peeled, cored and diced)
1/2 cup chopped red onion, (rinsed and drained to remove harsh bite)
1 jalapeno pepper, (seeded and diced (optional))
1/3 cup chopped cilantro
Tortilla chips (, for serving)
