Corned Beef

INGREDIENTS
BRINE
•1 1/2 cup kosher salt
•1/2 cup dark brown sugar
•1 tablespoon black peppercorns, cracked
•3/4 tablespoon ground allspice
•1 tablespoon dried thyme
•1/2 tablespoon paprika
•1 tablespoon red pepper flakes
•1/2 tablespoon coriander seeds
•1 tablespoon whole mustard seeds
•2 bay leaves, crumbled
•3 cups of beer
•1 beef brisket (fresh, 4-6 lbs), point cut and trimmed of excess fat.
VEGETABLES
•1 bottle Guinness or other stout or porter
•4 bay leaves
•1 tablespoon coriander seeds
•2 whole cloves
•1 dried chile de arbol
•12 baby turnips, trimmed
•8 red-skinned potatoes halved
•6 medium carrots, peeled
•4 medium onions, peeled, halved pole to pole
•1 head of cabbage, quartered
