2 pounds sweet potatoes (about 2 large), peeled and cut into 3/4-inch cubes

3 ribs of celery, chopped

2 tablespoons chopped fresh thyme
•
2 large bunches fresh kale, stems removed and leaves coarsely chopped

3 tablespoon apple cider vinegar
•
3 tablespoons brown sugar
•
1 teaspoon dry mustard
•
1 teaspoon salt
•
1/2 teaspoon ground black pepper
•
1 cup chopped pecans, toasted
•
4 large eggs, lightly beaten
•
3/4 to 1 cup turkey or chicken broth
