  • 1 [6] oz pkg Martha White Cotton Country or Buttermilk Cornbread Mix
  • 1 lb spicy or mild bulk breakfast sausage (cooked and crumbled)
  • 3 green onions (thinly sliced)
  • 1/4 cup red bell pepper (finely diced)
  • 2 Tbsp butter
  • 6 large eggs
  • 1 cup half & half
  • 1 tsp ground mustard
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/8 tsp ground nutmeg
  • few dashes hot sauce [optional]
  • 2 Tbsp grated Parmesan cheese
  • 2 cup shredded Colby-Jack cheese (divided)
