One recipe Stale Old Fashioned Corn Bread , cut into 1 inch chunks (about 12 cups)

1 tablespoon olive oil

1 large yellow onion, finely diced
•
3 ribs of celery, finely diced
•
8 ounces mushrooms, chopped (optional)
•
3 cloves garlic, minced
•
1 pound breakfast sausage (I used links, and cut them up) – cooked
•
10 sage leaves, chopped finely
•
5 sprigs thyme, just the leaves, chopped
•
4-4 1/2 cups chicken stock
