4 bone-in chicken quarters, with skin ((room temperature))
7 slices thick cut bacon, (diced)
4 teaspoons minced garlic, (divided use)
2 teaspoons salt
2 teaspoons dried thyme, (divided use)
1 teaspoon fresh black pepper
2 cups baby carrots
16 ounce container large baby bella mushrooms, (washed and halved)
8 ounce container pearl onions, (peeled)
3 ½ cups red wine ((whatever is your favorite))
2 cups chicken stock
2 Tablespoons cornstarch
