INGREDIENTS
4 tablespoons unsalted butter
3 ribs celery, cut into 1/2-inch-thick pieces
2 carrots, cut into 1/2-inch-thick pieces
1 medium onion, chopped
2 cloves garlic, minced
1 1/2 teaspoons fresh thyme, finely chopped, plus more, whole leaves, to taste, for garnish
kosher salt, to taste
freshly ground black pepper, to taste
1/4 cup all-purpose flour
1 cup wild rice
2 quarts low-sodium chicken stock or broth
2 cups water
4 cups rotisserie chicken, shredded
1 cup heavy cream
