2 large eggs, room temperature

1/4 cup heavy whipping cream, room temperature

1/4 cup Baileys Irish Cream, room temperature

8 chocolate sandwich cookies, roughly chopped
•
1 1/2 Tablespoons light corn syrup
•
3 ounces heavy whipping cream
•
6 ounces chopped chocolate (I used 4 ounces dark chocolate and 2 ounces of milk chocolate)

1/2 teaspoon vanilla
•
1 Tablespoon Baileys Irish Cream
•
about 1 1/2 cups heavy whipping cream (see recipe notes)
