2 sheets frozen puff pastry
1 3/4 cups whole milk
1 cup heavy whipping cream
7 large egg yolks
3/4 cup sugar
2/3 cup custard powder or cornstarch
1/2 teaspoon unflavored gelatin powder
2 tablespoons water
1/3 cup unsalted butter, diced
1/8 teaspoon salt
2 teaspoons vanilla extract
powdered sugar, to taste, for dusting
