Coconut Vegetable Curry

INGREDIENTS
2 tbsp olive oil
1 onion, diced
2 cloves garlic, finely minced
1 tbsp minced ginger
1 tsp salt, divided
2 tbsp curry powder
2 tsp ground coriander
1 tsp cumin
1 tsp turmeric
1/2 tsp hot pepper flakes (optional)
1 796mL / 28oz can diced tomatoes
1 400mL /13.5oz can coconut milk
1 cup water
2 carrots, sliced
1 medium sweet potato, diced (about 1 1/2-2 cups)
1 cup chopped green beans
1/2 head cauliflower, chopped
1 15oz can chickpeas, drained and rinsed
