INGREDIENTS
1.5 cups dry brown basmati rice
1 tablespoon olive oil
1 yellow onion (chopped)
1 teaspoon black pepper
1 tablespoon fresh ginger (minced)
1/2 teaspoon salt
2 cloves garlic (minced)
2 teaspoons ground coriander
1/2 teaspoon turmeric
1/8 teaspoon ground cayenne pepper
1.5 teaspoons curry powder
1 ounce can diced tomatoes (undrained, 14.4-)
1 pound large shrimp (peeled and deveined)
1 ounce can chickpeas (drained and rinsed, 15-)
1 can light coconut milk
1/2 cup fresh cilantro (chopped)
