INGREDIENTS
For the crust:
6 oz. Nabisco® Famous Chocolate Wafers (about 30 cookies)
5 Tbs. unsalted butter, melted
For the filling:
1-1/2 cups whole milk
1/2 cup heavy cream
1 vanilla bean, split in half lengthwise
6 large egg yolks
1/2 cup granulated sugar
1/8 tsp. kosher salt
2 Tbs. cornstarch
1-1/2 cups sweetened, shredded coconut, toasted, plus more for garnish
4 Tbs. unsalted butter
2 Tbs. coconut rum, such as Malibu
For the topping:
1-1/2 cups cold heavy cream
1 tsp. pure vanilla extract
1/4 cup confectioners’ sugar
