Coal-Roasted Oysters on the Half-Shell

INGREDIENTS
½ c mayonnaise
¼ c extra-virgin olive oil
3 tbsp chopped fresh flat-leaf parsley leaves
2 tbsp minced onion
1 tbsp fresh lemon juice
1 ½ tsp chopped fresh oregano leaves
1 tsp kosher salt
¼ tsp finely grated or minced garlic
¼ tsp red pepper flakes
2 tbsp fresh lemon juice
2 oz Manchego cheese, finely grated (1/2 cup firmly packed)
24 live oysters, scrubbed clean
coarse rock salt, for lining the pan
crusty bread, for serving
