INGREDIENTS
For the crust:1 cup (125g) all-purpose flour1 tbsp (12.5g) sugar½ tsp salt½ cup (125g) unsalted butter, cold and cubed1 large egg yolk1 tbsp (15ml) lemon juice
For the Tarte Tatin:6 medium Honeycrisp apples2 tbsp (30ml) lemon juice1/3 cup (75g) unsalted butter1 cup (200g) sugar1 vanilla bean, halved and scraped1 tsp fleur de sel (or sea salt flakes)
