INGREDIENTS
For the Sauce:
1 tbsp olive oil
3 finely minced cloves of garlic
2 28-ounce cans of crushed tomatoes
Kosher salt and fresh cracked pepper to taste
For the Shells:
1 cup packed roughly chopped baby spinach
2 eggs
16 oz whole milk ricotta
½ cup grated parmesan cheese + more for garnish
2 tbsp chiffonade fresh basil + more for garnish
2 cups shredded mozzarella cheese
16 par-boiled jumbo shell pasta
Kosher salt and fresh cracked pepper to taste
