INGREDIENTS
2 1/2 pounds Yukon gold potatoes ((peeled and cut into chunks))
1 cup parsnips ((peeled and sliced))
3 Tablespoons unsalted butter
1/4 cup heavy cream or whole milk ((I used unsweetened CashewMilk))
1 Tablespoon chopped parsley
sea salt and black pepper to taste
2 Tablespoons olive oil
1 cup chopped yellow onion
2 large cloves garlic ((minced))
2 pounds ground lamb
3 Tablespoons all-purpose flour
3 Tablespoons tomato paste
1 Tablespoon chopped, fresh rosemary ((or 1 teaspoon dried))
1 Tablespoon chopped parsley
1 Tablespoon fresh thyme leaves ((or 1 teaspoon dried))
1 teaspoon paprika
1 cup beef stock
1/2 cup red wine
2 Tablespoons Worcestershire sauce
10 ounce package frozen peas and carrots ((defrosted))
sea salt and pepper to taste
