INGREDIENTS
For the crust
4-1/2 oz. (1 cup) unbleached all-purpose flour; more as needed
1-1/3 oz. (1/3 cup) cake flour
1 tsp. granulated sugar
1/4 tsp. table salt
4 oz. (1/2 cup) cold unsalted butter, cut into 8 pieces
1/4 cup ice-cold water
1 tsp. cider vinegar
For the filling and topping
4 large egg yolks
1 14-oz. can sweetened condensed milk
1/2 cup fresh Key lime juice (from 14 to 16 limes) or bottled Key lime juice (preferably Manhattan brand)
1-1/2 cups cold heavy cream
1 oz. (1/4 cup) confectioners’ sugar
3/4 tsp. pure vanilla extract
