Classic Cottage Pie with Beef and Creamy Mashed Potatoes

"Try this easy cottage pie, a beef pie with mashed potato topping. If you use lamb instead of beef you can call it a shepherd's pie...."

INGREDIENTS
3 cups leftover roast beef (minced or finely diced)
2 tablespoons extra virgin olive oil
1 cup onion (finely chopped)
1 tablespoon butter
3 tablespoons all-purpose flour
1 1/2 cups beef broth
1 teaspoon Worcestershire sauce
1 cup frozen peas and carrots
Dash salt and pepper, to taste
3 to 4 cups leftover or fresh mashed potatoes (prepared with milk, butter, salt, and pepper)
Optional: 3 tablespoons sour cream
1 cup Cheddar cheese (finely shredded)
Dash of sweet Hungarian paprika
