•12 ounces shucked clams & oysters, without liquid
•1 tablespoon minced shallot
•1 large egg white
•1/4 cup heavy whipping cream
•1 tablespoon dijon mustard
•salt & pepper to taste
•1 cup Panko breadcrumbs
•1 tablespoon olive oil
Lemony Greens:
•4 cups mixed lettuce greens
•1/2 lemon, juiced
•1 tablespoon olive oil
•2 ounces Manchego cheese, shaved with vegetable peeler
•salt and pepper to taste
Poached Egg:
•4 large eggs
•1 tablespoon distilled white vinegar
•crushed red pepper flakes, to taste
