1 large egg, lightly beaten (room temperature)

3 cups bread flour

1 1/2 cups oat flour

1 Tbsp cinnamon
•
2 tsp instant yeast

1 cup raisins

semolina or farina, for sprinkling on the griddle or pan (you can also use cornmeal)
