INGREDIENTS
2 qt. apple cider
1 cup kosher salt
1/2 cup whole-grain mustard
1 Tbs. whole black peppercorns
1 Tbs. whole cloves
6 fresh bay leaves
3 cinnamon sticks
9 cups ice cubes
1 13- to 14-lb. turkey, gizzards, neck, and organs removed and saved for another use
1/2 cup (4 oz.) unsalted butter, at room temperature
1/3 cup apple butter
1 Tbs. very finely chopped fresh sage leaves
1/2 tsp. freshly ground black pepper
1/2 tsp. kosher salt
