Chocolate Sourdough Discard Donuts

INGREDIENTS
3 cups powdered sugar, sifted
1/2 cup heavy cream
1 tablespoon vanilla extract
pinch salt
1/2 cup sourdough discard
3/4 cup whole milk
1/4 cup granulated sugar
2 1/4 teaspoons active dry yeast
2 large eggs, lightly beaten
8 tablespoons unsalted butter, melted and slightly cooled
2/3 cup unsweetened cocoa powder
1/2 teaspoon instant espresso powder (optional)
2 1/2 - 2 3/4 cups all-purpose flour, plus a little more for dusting
1 teaspoon kosher salt
