1 tablespoon sugar (plus more for sprinkling)
¾ cup 1 ½ sticks cold, unsalted butter, cut into ½-inch pieces
½ cup (120 ml) cold, heavy cream
2 extra-large eggs (lightly beaten)
1 extra-large egg beaten with 2 tahlespoons water or cream (for egg wash)
