1/2 cup cocoa powder (I used Valrhona Dutch-processed)

1 teaspoons. vanilla extract
•
1/2 teaspoon espresso powder
•
1 cup flour
•
1/4 teaspoon salt
•
1/4 teaspoon baking soda
•
3 large eggs plus 1 egg yolk, at room temperature
•
2/3 cup olive oil (no need to use extra virgin, but if it’s all that you have it’ll work fine)
•
1 1/3 cups sugar
•
1/4 cup confectioners’ sugar for dusting
•
Ice cream–I like coffee, but pick your favorite chocolate pairing!
