100g of egg whites aged at room temperature (about 4 egg whites; separate 5 eggs and leave the whites out at room temperature covered with a paper towel for 24 hours, then measure for the recipe)

200g of Powdered Sugar

10g cocoa powder

For the Mint Ganache

1/4 cup mini chocolate chips
•
1/4 cup chopped creme de menthe pieces

1/3 cup heavy cream
