INGREDIENTS
1½ cups (180 g) unbleached all-purpose flour
¾ cup (60 g) sifted raw cocoa powder (or favorite fine-quality cocoa powder)
2 teaspoons (about 8 g) baking powder
1 (8-ounce or 226 g) package cream cheese, softened
½ cup (1 stick or 113 g) unsalted butter, softened
1½ cups (300 g) granulated cane sugar
1 tablespoon (15 ml) pure vanilla extract
½ teaspoon (2.4 g) fine-grain sea salt
¾ cup (128 g) fine-quality semi-sweet chocolates chips, melted & slightly cooled
1 large egg plus 1 large egg yolk (mine weighed 73 g w/o shells)
1 cup (120 g) confectioners’ sugar, sifted, for rolling & dusting cookies
