Chocolate Caramel Cheesecake Bites

INGREDIENTS

20 caramels, unwrapped

2 tablespoons cream or half and half

1 (8-ounce) package cream cheese, softened
•
1/3 cup sugar
•
1 large egg
•
1/2 teaspoon vanilla
•
1/4 cup sour cream
•
1 (12-ounce) package (2 cups) real semi-sweet chocolate chips (I used 12 ounces chopped Ghirardelli Milk Chocolate Wafers)
