For the salted caramel:

1 tbsp golden syrup
•
65g (2¼ oz) caster sugar
•
80ml (3 oz) double cream
•
¼ tsp rock salt
•
For the puddings:
•
55g (2 oz) butter, unsalted
•
100g (3½ oz) dark chocolate (minimum 70% cocoa solids), broken into pieces
•
30g/1oz plain flour, sieved
•
3 large free-range eggs
•
30g (1 oz) caster sugar
•
35g (1¼ oz) dark muscovado sugar
•
pinch salt
•
For the vanilla cream:
•
100ml (3½ fl oz) double cream
•
50g (1¾ oz) icing sugar
•
1 vanilla pod, split in half lengthways and seeds scraped out
