1 lb. boneless, skinless chicken breasts, chopped into bite-sized pieces

10 oz. frozen, chopped spinach
•
1 can (14.5 oz.) can of no-salt-added diced tomatoes
•
1 small can (8 oz.) can of no-salt-added tomato sauce
•
1 container (5.3 oz.) chobani non-fat plain greek yogurt
•
1 cup shredded mozzarella cheese, divided
•
1 cup reserved starchy cooking water
•
1 tsp. crushed red pepper flakes (less or none if you don't do spicy)
•
sea salt and fresh ground pepper to taste

Chopped cilantro for garnish
